You will need:

  • 200g strawberries
  • 100g blueberries
  • 2 bananas
  • 200ml milk
  • 1 tbsp honey
  • 1 tsp vanilla bean paste*
  • paper straws
  • blender
  • Skinny Syrups Unicorn Whipped Foam Topping (optional)

Prep the fruit by washing it and chopping it into small chunks. Keep a few of the strawberries back as they will be perfect for decorating your mermaid smoothie.

Pop the fruit in the blender and blend with the milk. Add honey and vanilla bean paste to taste.

Pour your mermaid smoothie into your favourite mermaid glass, add strawberries to decorate it and pop in some tropical paper straws (mine came from PoundLand!).

Skinny Syrups Unicorn Dreams Whipped Foam Topping

Well… it might seem I am turning my back on mermaids, but I promise this isn’t the case! This Unicorn Dreams Whipped Foam Topping (hello – with NO calories!) came from TKMaxx – I tried to find it online for you all but I just can’t (at least not at sensible prices).

[Now… for those of you that know me really well, you know I LOVE a bargain and I LOVE a treasure hunt. I love hunting out unusual items – or just those at amazing prices. The Unicorn dreams foam was one of those unusual ones. There are five TKMaxx or Homesense Stores nearby and I am quite happy to browse them all…. more on that another time! The pineapple string lights in the photo below are from TKMaxx, they are Sunnylife (I love their stuff) and they set me back all of £2.50. Can you see why I love it so much?]

The unicorn dreams topping just adds a little bit of sweet and sourness to this mermaid smoothie. Which, normally, I wouldn’t be keen on, but in this drink, it just works.

Tips for your mermaid smoothie…

Other than how to find bargains at TKMaxx… here are some tips for you:

If your blender is powerful enough (normally if it can crush ice) use frozen bananas and fruit to make it extra chilled.

This is a great way to use fruit that is going bad. I’m forever freezing bananas (especially in this weather!). Flash freeze them by laying them on baking paper on a metal tray. Once they have frozen, you can pop them in a container and keep them in the freezer (in perfect bitesize chunks) until ready to use.
